When you remove bullets or numbering formats from paragraphs, Word also removes any manual (direct) paragraph formatting for left, first line, and hanging indentation formatting for those paragraphs (that is, Word resets the paragraphs to their original left-indention properties, as defined by their styles).
This behavior is by design.
To maintain the desired indentations after removing bullets and numbering, define the desired left indentations as part of the style of the paragraph.
